Egg Salad a la Zara

4 hardboiled eggs
1/4 onion (chopped super tiny)
2 T ranch dressing
40 g (~2 oz) cream cheese
1 T Tony Chachere's cajun seasoning
1/2 T black pepper
1 t garlic powder (or more to taste, I guess -- I kinda just sprinkle that delicious stuff all over and stir)

Soften the cream cheese in the package on your ondol-heated floor while you chop the onion.  Mash the eggs and onion together.  Sprinkle on the cajun seasoning, pepper, and garlic powder and stir.  Mash in the cream cheese and make sure it's all mixed well.

Serves 2 or 3 (which means LEFTOVERS!! when you live alone - and it's often better on day 2!)

Eat it with crackers, seaweed (cause that's what you have in the cabinet), or if you have bread in the house, it makes a really good sandwich on toast, and if you've got lettuce, it makes great lettuce wraps!  Pair it with a nice pomegranate vinegar tea and light a candle to be classy.

It's big on flavor and a really easy dinner if you've got leftover hardboiled eggs to do something with!
